Why drink matcha over loose leaf green tea?
When you drink green tea you are throwing away a majority of the goodness in the left over tea leaves. Extraction with hot water (making a cup of tea) can only get a small amount of the constituents from the green tea leaf. Matcha is a finely-ground green tea powder, made using the finest Tencha tea leaves. These rare leaves are covered by shade in the last month before harvesting. After harvesting, the leaves are steamed and dried, allowing them to remain flat while they are stripped of their veins and stems. The stripped leaves are then ground in slow-turning stone mills.
