//BELL PEPPERS// Though these peppers may not be spicy, they are considered "hot" and pungent in TCM as they warm the interior of the body and act on the HEART and the SPLEEN. Members of the Nightshade family, all bell peppers actually come from the same plant but they differ in their level of maturity. ▪

//GREEN PEPPERS// These are harvested before they are ripe. If left on the plant to mature, they would next turn yellow and then red. These are the less expensive and most bitter of the peppers.

Red Bell Peppers have a sweet, almost fruity taste. Pimento and paprika are both prepared from red bell peppers.
