Keto Lemon Poppyseed Muffins
Almond flour is a big part of still being able to enjoy some sort of baked goods while on the keto diet. Learning to bake with it can be kind of tricky and I have only messed up a couple of recipes so far. I am happy to say I nailed this one ๐
Keto Lemon Poppyseed Muffins

๐น1/3 cup erythritol
๐น1 teaspoon baking powder
๐น2 tablespoons poppy seeds
๐นยผ cup salted butter, melted
๐นยผ cup heavy cream
๐น3 large eggs
๐นZest of 2 lemons
๐น3 tablespoons lemon juice
๐น1 teaspoon vanilla extract
๐น25 drops liquid Stevia
This makes a total of 12 Keto Lemon Poppyseed Muffins. Each muffin comes out to be 130 Calories, 11.69g Fats, 1.73g Net Carbs, and 4.04g Protein.
